Simple Salad and Pasta
So, after browsing around the Farmer's Market on Fulton and buying the ripest cherry tomatoes, Lily and I decided to whip up salad and pasta in order to use whatever we had in our fridges that could go bad within the next few days. We chopped cucumbers, cherry tomatoes, green peppers, mushrooms, broccoli, and one heart of romaine lettuce. I shredded just enough cheddar cheese from a block and added it. The croutons are fat-free garlic and onion flavored. Their usually around $1.50 at Meijer, and they are a great snack and salad topper. Finally, we cooked a bit of whole grain penne noodles and added Lily's leftover tomato-based pasta sauce to it. She grilled some mushrooms and green peppers to add to the pasta, all while I cut chicken breasts into chucks, seasoned them with salt, pepper, and a bit of cajun to add a punch. I grilled the chicken in a little butter for around seven minutes.
Add the chicken to the salad or pasta, and boom, a delicious meal. We used balsamic vinaigrette to dress the salad, but have it however you choose.
Beautiful food can be fast, cheap and delicious. Buy foods that you like and then put them together. Don't be afraid to throw something on a salad or in a pasta.
