I stumbled on 4 cucumbers for a dollar at the farmers market and wanted to make a dip for my pita and to put on sandwiches.
I don't follow an exact recipe, you can just add to taste.
I used a cucumber and a half and chopped it up as small as I could get. I like my tzatziki kind of chunky but you could also blend in a food processor.
You are supposed to use dill but I had a lot of parsley and used that instead.
I combined about a cup and a half of yogurt with as much garlic as you like, a bit of lemon juice, and then stirred in the cucumber and parsley! Super simple, cheap, and refreshing on a hot summer day.
I am going to go have some on pita right now!
