Chicken Quesadillas

This recipe is very simple and cheap! You needn't even use chicken if you choose not to.

Boil chicken breasts then allow them to cool before shredding. Shred all of the chicken, use what you'd like for this dish and save the rest for another.

Add your preferred amount of salsa to the chicken with a couple tablespoons of water, and put it on medium to medium-low to let the salsa and chicken reduce together.

Shred cheese. Lettuce and tomato are optional.

Butter one side on each of the tortillas.

Place the buttered side down in the frying pan.

Sprinkle cheese then chicken and salsa then more cheese, then top it with the other tortilla. Be sure not to put too much filling, otherwise it might be too heavy and not crispy enough.

Flip.

Finally, you can add the lettuce and tomato to the inside of the quesadilla while the cheese is still melted, if you like. Otherwise just put it on top with sour cream.

Cut it into fours and enjoy!
